Sage Roasted Summer Squash

This recipe is from the cookbook Asparagus to Zucchini MACSAC (available for purchase from Liz the farmer)

2 medium zucchini
2 medium yellow squash
2 Tbl. Olive oil
2 Tbl chopped fresh sage
1 Tbl. Minced garlic
salt & pepper to taste

Heat oven to 350 degrees. Cut squash and zucchini into 1-inch cubes, toss with other ingredients, and roast until tender, 15-20 minutes. Season with salt and pepper to taste. Makes 4 servings.
